Why is it that. . .

every time I decide I am going to start eating more healthfully, I'm suddenly hungrier than usual? This despite having eaten the same breakfast I eat probably 4-5 days a week: instant oatmeal.

And I'm talking actual, physical hunger here. . . . that unpleasant nagging gnawing in my stomach. I'm not even complaining about my psychological longing for less-healthful foods.

[sigh]

Try to cooking some steel cut oats ahead of time. I would make a 3 days worth at a time, with flax meal, apple chunks, and cinnamon. It was good. The instant is more precessed so it spikes your blood sugar and is digested faster.

I despise apples and cinnamon, otherwise I'd consider that. I could still do the steel cut oats with berries or something, though.

Or maybe I should start having egg-white omelets for breakfast instead. Start the day with some protein instead of just carbs.

Oh, I completely can relate to you once again. It's so true, the minute you decide to focus on healthful living, like really think about it, it seems to become impossible to accomplish anything. Yes, this happens to me all the time. Today in fact. Was 100% thinking today would be a good one, going to stay on track, and suddenly I'm much hungrier than every other day.... I guess it happens... I guess our minds are simply evil like that :)

Sometimes fiber makes my stomach growl whether I'm hungry or not. But honestly, I find that protein does fill me up more. It's a constant battle because I HATE breakfast, especially the idea of choking down an egg, but I often find that it's 1-2:00 before I'm hungry again.

I have two recipes that are make-ahead for eggs that I'm going to try in the next few weeks. Let me know if you are interested.

I'm sure you could sub something else for the apples and cinnamon. The cinnamon takes some of the blah that I feel when eating oatmeal away. I'd rather have pancakes. :) I make it with skim milk to bulk up the protein content. Dieting sucks.
